Chateaubriand Fillet steaks are the ultimate in opulence and extravagance, the caviar or Champagne of the beef world. Chateaubriand, like all of the other cuts from the fillet, gives a very tender succulent piece of meat. Our fillets come from rare and native breeds that are finished at no less than 30 months and have spent their lives grazing on a varied diet. Fillet comes from the lower middle of the cow’s back and does the least work of all the beef cuts, making it incredibly tender. It also contains very little fat, which means there’s no need to cook fillet for a long time to break down any collagen.
